The NANIWA Professional Water Stone is the hardest Japanese sharpening stone, so wear is absolutely minimal and its lifespan is maximized. It not only sharpens well, but also quickly. Experienced users can truly feel the difference with this stone. The secret that sets these high-quality whetstones apart from others is that they are magnesium-bonded rather than resin-bonded. They have a higher density of finely graded abrasive particles per unit surface area than resin-bonded stones. You do not need to apply force while sharpening. Naniwa professional water stones are available in the following grits: 400, 600, 800, 1000, 2000, 3000, 5000, and 10,000. Although you don’t need to own every single grit, we recommend at least three. A good set of three grits is 400, 1,000, and 5,000. Grain 10,000 is an ultra-fine sharpening stone for the final step of the sharpening process. With this sharpening stone, you remove all small scratches and irregularities. The result is a mirror-smooth edge that allows you to cut without feeling any resistance.

Soaking professional whetstones is not recommended. We recommend keeping a spray bottle handy to keep the stones wet while you sharpen.
