The KAI Seki Magoroku Shoso 16.5 cm Chinese-style chef’s knife is a large square knife with a very wide blade surface. Every part of it can be used. The edge is used for slicing vegetables, especially larger ones like cabbage, which are often featured in Chinese cuisine. However, some chefs find this type of knife agile enough for almost any kind of slicing and chopping. The flat blade makes it a great tool for crushing garlic cloves or ginger. The 6.5-inch blade is made of high-carbon stainless steel, which allows the blade to retain a sharper edge for longer. In addition, the handle is a seamless extension of the blade, ensuring greater strength and hygiene. With its Seki Magoroku Shoso line, KAI expands its portfolio of high-quality Japanese kitchen knives with a new series featuring an all-steel design. Shoso combines lightness and dynamic functionality with precision in an elegant and practical way. Made of stainless steel with a hardness of 56±1 HRC, the forged blades are sharpened and refined using new precision technology. To reduce cutting resistance, the blades are sharpened at a slow grinding speed and finished using the latest technological processes. As a result, the blades offer excellent long-lasting sharpness and ensure a high level of functionality for everyday use in the kitchen. Combined with an ergonomically shaped handle made of 18-8 stainless steel, the knives are lightweight and perfectly balanced. The deeply embossed diamond pattern on the sides of the handle ensures a secure grip. The blade of the Shoso knife is forged from 5CR15MoV stainless steel with a hardness of 56 (±1) HRC, which guarantees a high and uniform level of hardness as well as long-lasting durability during cutting. Their convex ground edge gives the knives stability-ideal for a clean and precise cut. The matte finish accentuates the knife’s understated elegance. The matte-finished handle, made of 18-8 stainless steel, is exceptionally sturdy and provides a professional grip thanks to its symmetrical elliptical shape. The integrated diamond pattern ensures a firm and comfortable grip while cutting.
