A blade made of stainless Japanese Damascus steel (T – CO69), a forged 69-layer construction, an attractive pattern, and a harder steel core. The steel core has a high carbon content and offers excellent sharpness and edge retention . The Kiritsuke is perfectly balanced and features an ergonomic steel G10 handle with integrated brass accents for comfortable handling and a premium look. This is a versatile Japanese-style knife primarily designed for preparing fish. It can also be used for cutting meat, vegetables, herbs, and fruit.
