The KAI 6724Y Wasabi Black Yanagiba Sushi and Sashimi Knife features a Yanagiba-style blade (willow leaf). A traditional Japanese knife for slicing. For finely slicing fish and meat. With its narrow, long blade, this knife is ideal for cutting paper-thin slices, especially in sushi and sashimi preparation. The knife ensures a beautiful and, above all, smooth cut. The length and shape of the blade make long, continuous cuts possible. This series, featuring a mirror-polished stainless steel blade with a hardness of 58 ± 1 HRC, will bring an exotic touch of the Far East to your kitchen. The handle is a combination of bamboo powder and black polypropylene. This ensures optimal hygiene-a result of the natural antibacterial properties of the bamboo particles. The handle’s shape is asymmetrical and designed exclusively for right-handed use. Unlike a traditional Japanese wooden handle, this one is not simply inserted but completely encases the blade; on the one hand, this prevents the blade from slipping out of the handle, and on the other, it prevents dirt from accumulating.
